I think it really depends on what you cook. If you get the high temperatures in order to cook quickly, the sooner the better, but if something like the chicken cook evenly, and it takes time, so you do not want a high heat, must wait until "coal, that more than the gray.

You're right. Wait until the charcoal has a layer of gray ash. Coal has not really reached the point of combustion so far and you can leave again if you release the carbon outside and down drops of juice.
